Join farmer and friend Ann Marie Bouthillette of Blackbird Farm and the Gracie’s culinary team as we learn the “who, what, when, and why” of Rhode Island’s most delicious beef and pork! The evening will focus on the curing, cutting, and cooking of beef and pork. Learn how to cure your own bacon! Spend time not only with our talented kitchen staff, but also with the farmer herself. Gracie’s Cooking Sessions are the perfect opportunity to learn techniques and lessons from our professional kitchen that can then be applied to your home cooking.

Each of the three Cooking Sessions in 2017 will have its own focus with specific lessons, techniques, and takeaways. After working hand-in-hand with our talented kitchen staff to execute a 3-course dinner, guests will sit down with the chef and cooks to enjoy the fruits of their labor (paired with wine, of course!). Our wine-savvy service staff will be present to answer any food and wine pairing questions you may have. Lessons: Sustainable local farming, meat cookery, utilizing beef and pork scraps. Techniques: Bacon curing, basting, meat resting.
